Animal rights campaigners have criticised the Chinese over their extreme eating habits after a video of diners eating a live fish became a hit on the internet.
The film, in which a part-fried fish is shown breathing and wriggling on a plate as it is being slowly eaten alive in a restaurant, has been posted on the video-sharing website YouTube.
In order to keep the carp alive chefs cook its body but wrap its head in a wet cloth to keep it breathing, before covering it in sauce and serving in on a plate.
The YouTube video shows diners, who are laughing and joking, prodding the fish while it is still moving, before picking it apart with chopsticks.
Peta, the animal rights group, called the video, which had more than 120,000 views on YouTube in a week, "disgusting".
A spokesperson said: "Every decent person should be shocked when anyone mocks or abuses a helpless dying animal."
It is not the first time that the Chinese have been criticised for their extreme eating habits.
Reports have claimed some restaurants offer monkey's brains. Other dishes include rats, dogs, snakes, lizards and baby mice.
Last month Stephen Fry was criticised by the Chinese embassy after he singled out the Chinese culture as being the biggest threat to some endangered species.
“It is not very pleasant for us to single out a culture, but, if you care about lions and tigers and whales and sharks, it is the Far East and the way they eat, or the way they attempt to cure themselves, that seems to be the biggest threat," he said.
A spokesman at the Chinese embassy responded: “I don’t think it is fair to accuse other cultures of having certain negative habits and traditions.
“We have our traditions, as the Spanish have bullfighting, and you, until recently, had foxhunting. We did not criticise you or the Spanish for this. Tiger bones for traditional medicine are now banned, to the suffering of the Chinese industry.”

最近有人把享用「呼叫魚」的過程拍成短片放上網,片段所見,相信是一群香港食客在內地點了這道菜。似是鯉魚的魚身在上桌時已經煮熟,淋上配料與汁液,但魚頭仍然活生生的,有人用筷子篤幾下,魚嘴即一開一合。
食家蔡瀾說,多年前已見識過這道菜,而且在內地頗普遍,「廚師用一條濕毛巾包住魚頭,魚身浸落油裏面炸,所以個身熟咗,個頭仲會郁。」他說這道菜的發明正好顯示了人性殘忍的一面,「人覺得咁樣好新鮮,其實食呢道菜嘅人係心態唔平衡,應該係唔識食!」
呼叫魚多數選生命力強的鯇魚或鯉魚。動物地球總幹事黃繼仁說,這是文明大倒退,作為中國人應該引以為恥,「我都唔明白人性去咗邊,咁樣同食猴子腦冇乜分別,完全係人性埋沒!」
傳染病醫生勞永樂說,食用「呼叫魚」很高危。淡水魚體內含有甚多病毒,除常見的霍亂菌,魚鰓魚嘴常含有肝吸蟲,可導致膽管閉塞及膽管炎,嚴重的會奪命。

鱼宰杀后马上就吃并不科学,还可能把毒素吃进体内。
新鲜活鱼刚刚宰杀后,会处于一个僵硬阶段。此时鱼体内的能量代谢仍在进行,会发生一系列生物化学变化。
在这个阶段,鱼肉中会产生少量的乳酸和磷酸,以抑制腐败微生物的繁殖与生长。
此时的鱼肉还呈弱酸性,肉质也发硬,鱼肉组织中的蛋白质还没有分解产生氨基酸,而氨基酸是鲜味的主要成分。
如果这时烹饪,不仅口感差,营养也不能充分被人体吸收,酸性肉质还会影响消化。
此外,鱼体内可能存在一些毒素、寄生虫或细菌,这些没有死亡的有害物质也可能进入人体。
鱼被宰杀后2—5个小时,鱼肉中的一些酶才开始发挥作用,使蛋白质分解为氨基酸,让鱼肉变得鲜美细嫩。
同时,鱼体内代谢已经停止,毒素大都排出,细菌也都已经死亡,所以这是烹调的最好时间。
超过6个小时,鱼就开始腐烂变软,微生物繁殖,鱼就容易变质了。
因此,要想吃到可口营养的鲜鱼,最好宰杀后放到冰箱冷藏室存放两三个小时再做。
如果放在室内,室温高的话时间缩短到1小时,室温低就延长到5小时。

Eating carp while the fish is still alive is a Chinese delicacy. But it's not the only morally dubious dish on world menus
The Chinese have come in for some flak over their eating habits after a video was posted on YouTube showing diners eating a part-fried, still-breathing, carp. Chefs kept the fish alive by wrapping its head in a wet cloth, before covering its half-cooked body in an unspecified sauce. The video ends with shots of the diners picking apart the still-moving fish with chopsticks. It's not most people's idea of a meal out – but if you are in to extreme eating, there are plenty more morally dubious taster menus.
▶ Live octopus The Koreans take sushi to its logical conclusion. The art is to grab an octopus around the body, dump the head in a sauce and then eat whole. You are advised to put the head end in your mouth first, as the trailing, wriggling tentacles can get up your nose.
▶ Monkey brains Restaurants in China and Malaysia serving fresh monkey brains, spooned out of the skull, may be an urban legend – although there are enough references in literature to suggest the practice is not entirely fictional. But raw and cooked brain of dead monkey is widely consumed in the far east.
▶ Still-beating snake heart US macho chef Anthony Bourdain popularised this dish in his book A Cook's Tour in which he proved just how "hard" he was by travelling the globe eating exotic animals. He missed out on the giant panda but washed down the still-beating heart of a cobra with rice wine and snake blood.
